Chapter 7 provides an introduction to the farming of terrestrial gastropods. Definitions of key concepts are given, and the different types of farming systems are presented. The chapter summarizes the criteria for selecting species for farming as well as the criteria for choosing the location of snail farms. It also outlines the main problems encountered in snail farming. The methodology for harvesting and storing snails is explained, and finally, value-added specialized products are presented.
