Chapter 6 examines the biology, physiology, and ecology of the four edible and commercially important terrestrial gastropod species. The chapter focuses on data from Greek populations that can be applied to snail farming in Greece. It discusses the variation in activity and reproductive cycles across different climatic and geographical regions of Greece and links the biological characteristics of snails to criteria for selecting farm locations and farming methodologies. Additionally, it addresses the genetic, physiological, and behavioral variation among Greek populations according to their origin, connecting these traits to the selection of breeding stock when establishing farms, with the aim of producing snails with optimal growth and survival characteristics.
