Chapter 5 focuses on the origin, classification, and nomenclature of the main edible and commercially important snail species worldwide, within the European Union, and in Greece. It then concentrates on the four edible snail species found in Greece: Helix aspersa, Helix pomatia, Helix lucorum, and Eobania vermiculata. For these species, information is provided on their external morphological traits, primarily from a zootechnical perspective, offering practical value for snail farmers. Finally, the chapter presents data on the consumption and trade of these species in Greece and Europe.
