Chapter 1 provides a historical overview of the use of terrestrial gastropods from antiquity to the present, both in Greece and worldwide. It presents information on the consumption and farming of snails, the nutritional value of their meat, and the potential for developing new products (eggs, caviar) derived from snail farming. The chapter also discusses the possible uses of snails and their derived substances in cosmetology and pharmaceuticals. Additionally, it outlines data related to the economic significance and structure of terrestrial gastropod farming globally, within the European Union, and in Greece. Finally, the chapter addresses the sector of snail trade and processing in Greece and internationally.
