Classification of fruits and vegetables into categories based on their susceptibility to freezing. Factors affecting the severity of freezing damage. Classification of physiological disorders in fruits and vegetables according to the cause: high temperatures, storage atmosphere (low O2, high CO2, ethylene), senescence, and other factors.
