A detailed description is provided for the main physiological processes that affect the postharvest life and behavior of fruits and vegetables after their harvesting. Special emphasis is placed on the physiological functions of the products that cause postharvest losses (respiration, water loss, injuries, etc.). Definition of ripening and senescence. Description of the physiological and metabolic processes related to ripening. Biosynthesis and the role of ethylene in the postharvest behavior of horticultural crops, with particular reference to ripening. The main physiological and metabolic changes caused at various stages of fruit ripening and postharvest are also presented.
