The chapter will describe the basic physico-chemical principles that govern the interaction between teeth and the oral environment. The terms demetallization-remetallization, which characterize this process, will be analyzed. The physicochemical reactions that lead to the initiation of the formation of carious lesions in the dental tissues will be listed as well as the corresponding ones that take place during the healing and repair of the lesions. The chapter will include a large number of images, diagrams and interactive videos.
