Abstract:
The chapter introduces the reader to the major theories for interpreting dietary choices. Theories can be classified into two large categories: first, theories that take a sociological perspective and second, theories that are based on anthropological and ecology-centered conceptual frameworks. First, the basics of functionalism and structuralism and how symbolic constructs of food are studied are discussed. Second, the approaches of environmental materialism are presented through an analysis of selected case studies from the anthropological record.
