The chapter examines the characteristics and dynamics of newly established low-tech and small initial capital SMEs operating in two sectors that already have acquired significant importance for the Greek economy, or they may soon do so. The first case concerns small independent shops selling quality local food. The second focuses on the dynamics of small microbreweries that have emerged quite recently in several areas of the country.
