Abstract:
This chapter theoretically reviews the perception of bitterness, the genotype-phenotype relationships, and the population genetics of variability in bitter taste perception. It aims to integrate the students’ findings from previous exercises into a unified theoretical framework. Topics include the perception of bitterness, the bitter taste receptors, TAS2R38 and bitter taste perception, and genotype-phenotype correlations. The chapter also discusses and analyzes the results of phenotypic and genotypic tests for bitter taste perception of the substance PTC, including class findings and commentary.
