Abstract:
In this chapter, various food groups are presented along with detailed lists of the foods that comprise them. Additionally, the concept of equivalents is defined, including the equivalence of each food group in terms of proteins, carbohydrates, and fats, and the quantities of foods from each food group corresponding to 1 equivalent are described. The chapter also includes the equivalent systems used for composing a diet for a healthy individual, as well as for diabetic and renal patients.
