Abstract:
This specific chapter includes the estimation of the needs of healthy and ill individuals in energy, protein, nutrients, and fluids, according to which the goals of each nutritional intervention are formulated. Specifically, it presents the formulas used to calculate energy needs, both in the healthy population and in special cases, such as overweight individuals, seriously ill patients, or burn victims. Similarly, it describes the calculation of protein needs in normal and pathological conditions, as well as the corresponding methods for estimating fluid needs. Additionally, it analyzes the points of nutrient absorption and presents the method for estimating the needs for vitamins and minerals depending on gender, age, and any coexisting pathological conditions (reference also in Appendix 3).
