Abstract:
The characteristics of ripening, postharvest physiology, and postharvest handling of climacteric and non-climacteric vegetable crops are presented. Special emphasis is placed on the qualitative and physiological changes that occur in tomato fruits during their ripening, due to the possibility of harvesting tomatoes at an early stage of maturity and completing ripening postharvest. Detailed reference is made to other climacteric and non-climacteric fruits and vegetables, highlighting the variety of postharvest handling techniques required due to the diversity in growth and ripening characteristics, as well as the appropriate stage for harvesting for fresh consumption for each category of crops.
