For each species or group of species (e.g., pome fruits, stone fruits, etc.), the specific quality and maturity criteria are analyzed, along with the most significant physiological-biochemical changes during ripening and postharvest life. Special storage conditions and applied postharvest treatments are discussed, while reference is made to the most important physiological disorders and postharvest diseases.
