Abstract:
Initially, reference is made to the morphological characteristics of various fruits and vegetables, which are classified based on the part consumed (climacteric and non-climacteric fruits, whole plants, leafy vegetables, underground storage organs). Subsequently, the definition of the quality of fruits and vegetables is given, describing the main qualitative characteristics and presenting the criteria by which the quality of fresh fruits and vegetables is evaluated. The third part discusses the chemical composition of horticultural crops and the role of each major constituent in shaping the quality characteristics of these products.
